another ordinary week of my life..

This week has been filled with ordenary stuff like work, gym, baking, baby-sitting, spanish studies, watching Glee, skyping with friends and family and lots more! :) ..There's a spanish girl in my ward who's studying Swedish and she wanted me to help help her, in return she promised to help me with spanish. So yesterday after work we had our first Swedish&Spanish class. It was kind of fun! I haven't studying spanish since junior high!

..I've also been thinking a lot! ..it's my 21st birthday in just over a week, and I can't decide wether I should celebrate it or not. The winter is killing me and I want something fun to look forward to, but I don't want to make people celebrate me.. so I still haven't figured out what to do! :P

anyways.. tonight Im having a lazy night at home! earlier tonight I was baby-sitting for a family in my ward.. our ward had a temple night today, so I helped them so that they could go together as a couple! :) ..they have two darling kids, who were really easy to take care of, so we had a fun night together! :) ..I was done pretty early and came home and baked some "Kokostoppar" - "Coco tops" ..they're super easy to make and they turned out to be superdelicious!! :)

I pre-heated the oven on 175° (Swedish- think it's celsius!)
Then I melted 50g butter.
After that I whipped 2 eggs and 1.5dl until it was fluffy..
Then I added the butter and 200g of coconut flakes and just mixed it all. Then I put the mix in smaller piles on a baking sheet and put it in the oven for about 12 minutes (when the coco tops became golden brown) - YUMMM!!!

Those look like macroons! and I love your strawberry shortcakes. I eyed some heart cooking molds like that the other day. I think you should definitely do something for your birthday! Not many days we can justify just having fun! Small or big doesn't matter :) Just do something you would enjoy with people you love! 21 wow!!! love eliz

PS I made these for Valentines and they are amazing!!! I used mugs since I didn't have ramekins, you could use your heart molds :)
